Saint Peter Paddo x Aphelion Wine Dinner 14th August 2025

Once or twice a year, Rob & I are lucky enough to have a really, really great meal. 

One where attentive helpful service, stunning decor, joyful company, delicious innovative food which is beautifully presented, delectable wines to match are all present in spades. 

Those are the sorts of things that makes a meal one of those that linger in my memory bank, and which I long to return to. 

This year so far our best meal was at the Catseye Beach Club. 

The newest restaurant on Hamilton Island, it is open to the beach and the pool. I really felt part of the Whitsundays. The kids played on the lawns in front of the ocean between courses.  Sparkling service remembered us and our preferences while also being warm and welcoming.

And the food! Chef Josh Niland curates the menu, sources the produce and trains the kitchen team in those Masterchef-worthy seafood skills - and it shows. Seafood is the highlight of the menu. Roast Coral Trout is a nose to tail dining experience, with sharable side dishes that enhance and contrast the main. 

This dining experience spurred us into action. 

Having had a taste of the Niland dining experience, we long for more. 

Time to connect, relax, indulge, enjoy. Conversations not Comments.  Swirling not scrolling. Real Feels, not Reels. Connection, not clickbait. Presence, not Push Notifications
